Description: This barley came into our collection many years ago from K.U.S.A, an organisation in California saving endangered heritage grains. Ancient Japanese naked food-barley. Spring growth habit has purplish coloured grain and it is avert rare glutinous trait food barley. Glutinous-trait food barleys are very, very rare. This is one of them. Makes excellent sprouted barley cakes.

All grains contain phytic acids and other anti nutrients and were traditionally always either fermented, sprouted or soaked and cooked for a long slow period to make the grains digestible and nutritious for the human digestive system.
